La digesti\u00f3n anaerobia se presenta como una alternativa viable para su tratamiento. En esta investigaci\u00f3n se evalu\u00f3 el comportamiento y la capaciedad de un reactor uasb (upflow anaerobic blanket reactor), para la eliminaci\u00f3n de materia org\u00e1nica de suero de queser\u00eda via proceso anaerobio. Se verific\u00f3 tambi\u00e9n la posibilidad de un pulido del efluente de un reactor uasb en un reactor sbr (sequencing batch reactor). La tesis se desarroll\u00f3 en cinco m\u00f3dulos de estudio, y en cada m\u00f3dulo se oper\u00f3 en etapas de acuerdo con sus objetivos espec\u00edficos.  como variables de estudio se mencionan la velocidad de carga org\u00e1nica afluente, tiempo de retenci\u00f3n hidr\u00e1ulico, adici\u00f3n de alcalinidad extra y la operaci\u00f3n a distintos niveles de ph en la fase acidog\u00e9nica. A trav\u00e9s de los resultados obtenidos, se evalu\u00f3 el comportamiento del reactor en funci\u00f3n principalmente de los porcentajes de eliminaci\u00f3n de materia org\u00e1nica, producci\u00f3n de \u00e1cidos grasos vol\u00e1tiles, distribuci\u00f3n de la biomasa en el interior del comportamiento de digesti\u00f3n, productividad de metano y la necesidad de adici\u00f3n de alcalinidad externa entre otros permitieron, pudi\u00e9ndose concluir que el reactor uasb present\u00f3 satisfactoria eliminaci\u00f3n de materia org\u00e1nica en el tratamiento del suero de queso entero y desproteinizado. sin embargo los efluentes de estos reactores, al no cumplir condiciones de vertido debido al remanente de nutrientes y materia org\u00e1nica, necesitan de un postratamiento de pulido.
