Jes\u00fas Petr\u00f3n Test\u00f3n <\/strong><\/h2>\n<p>La cantidad y composici\u00f3n de la fracci\u00f3n lip\u00eddica intramuscular del jamon ib\u00e9rico son objeto de estudio en esta tesis doctoral, descibi\u00e9ndose variaciones en la misma en funci\u00f3n de diferentes factores. Se detallan los an\u00e1lisis sobre los l\u00edpidos rotales y sus diferentes fracciones (tria-cilglicades, fosfol\u00edpidos, as\u00ed como de los diferentes componentes de la fracci\u00f3n insapomificable. el tipo de alimentaci\u00f3n recibida durante la \u00faltima fase del ciclo productivo (se compara la alimentaci\u00f3n en montanera con el cebo a base de piensos compuestos) present\u00f3 las mayores diferencias en cuanto a la composici\u00f3n de la fracci\u00f3n lip\u00eddica intramuscular. La raza (ib\u00e9ricos puros comparados con ib\u00e9ricos cruzados con duroc (50%)) y la duraci\u00f3n de la montarenas hasta el momento del sacrificio (55 d\u00edas y 75 d\u00edas), modificaron esta fracci\u00f3n en menor medida.
