{"id":18179,"date":"2002-05-07T00:00:00","date_gmt":"2002-05-07T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/composicion-bioqua%c2%admica-y-propiedades-funcionales-de-la-biomasa-de-las-microalgas-phaeodactylum-tricornutum-y-nannochloropsis-spp\/"},"modified":"2002-05-07T00:00:00","modified_gmt":"2002-05-07T00:00:00","slug":"composicion-bioqua%c2%admica-y-propiedades-funcionales-de-la-biomasa-de-las-microalgas-phaeodactylum-tricornutum-y-nannochloropsis-spp","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-medicas\/composicion-bioqua%c2%admica-y-propiedades-funcionales-de-la-biomasa-de-las-microalgas-phaeodactylum-tricornutum-y-nannochloropsis-spp\/","title":{"rendered":"Composici\u00f3n bioqu\u00edmica y propiedades funcionales de la biomasa de las microalgas phaeodactylum tricornutum y nannochloropsis spp."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Antonio Navarro P\u00e9rez <\/strong><\/h2>\n<p>La investigaci\u00f3n presentada en esta memoria est\u00e1 dirigida al estudio de la composici\u00f3n bioqu\u00edmica y propiedades funcionales de la biomasa de dos microalgas: phaeodactylum tricornutum y nannochloropsis spp., Y ha comprendido el estudio de tres \u00e1reas principales:  sistema de cultivo: se han utilizado fotobiorreactores cerrados en externo y en interno, tanto en modo continuo como discontinuo, con diferentes tiempos de residencia (tr) e irradiancia media externa (iwm).  la productividad m\u00e1xima de biomasa alcanzada en cultivos externos de p.Tricornutum es de 1,88 g.L-1.D-1 para un tr=2 d\u00eda e iwm de 2838 microme.M-2.S-1, mientras que para cultivos internos de nannochloropsis spp., Es de 0,10 g.L-1.D-1 para un tr=5,8 d\u00eda e irradiancia fija io=365 microme.M-2.S-1.  composici\u00f3n bioqu\u00edmica: p.Tricornutum presenta un mayor contenido de prote\u00ednas (36%) y l\u00edpidos (18%), mientras que nannochloropsis spp., Destaca por su alto porcentaje de carbohidratos (31%) y fibra (3%). Por tratarse de especies de agua marina, ambas presentan valores medios de cenizas elevados (14-16%).  en general, al disminuir el tiempo de residencia el contenido de prote\u00ednas y cenizas aumenta mientras que el de l\u00edpidos y carbohidratos disminuye. por otra parte se favorece la s\u00edntesis de \u00e1cidos grasos poliinsaturados, sobre el total de \u00e1cidos grasos.  en cultivos externos de p.Tricoruntum, el aumento de la irradiancia media externa, iwm, reduce el contenido de prote\u00ednas y l\u00edpidos, favoreciendo la acumulaci\u00f3n de carbohidratos, cenizas y fibra.  propiedades funcionales: la biomasa de p.Tricornutum presenta mejores propiedades funcionales que nannochloropsis spp., Con una mayor solubilidad de nitr\u00f3geno y capacidad de emulsificaci\u00f3n. Ambas biomasas presentan elevada capacidad de absorci\u00f3n de agua, baja capacidad de absorci\u00f3n de grasa y reducida viscosidad.  la aceptabilidad del alimento confeccionado con harina y pasta
