La caracterizaci\u00f3n e identificaci\u00f3n moleculares de levaduras (estudio del fragmento its rdna para caracterizaci\u00f3n, y secuenciaci\u00f3n del dominio d1\/d2 rdna y an\u00e1lisis del perfil electrofor\u00e9tico de los lmw rna para identificaci\u00f3n a nivel de especie) revel\u00f3 la conveniencia de la combinaci\u00f3n de dos t\u00e9cnicas basadas en los its (polimorfismos de tama\u00f1o y rflp), que mostraron id\u00e9ntica utilidad en el agrupamiento de cepas que la secuenciaci\u00f3n del d1\/d2 y los lmw rna.  de acuerdo con los resultados obtenidos por t\u00e9cnicas fenot\u00edpicas y genot\u00edpicas, se propone la revisi\u00f3n del status taxon\u00f3mico de las razas prostoserdovvi y oviformis de la especie saccharomyces cerevisiae, y la revisi\u00f3n del g\u00e9nero pichia. Tambi\u00e9n se propone un estudio profundo del g\u00e9nero torulaspora, por su elevada proximidad al g\u00e9nero saccharomyces.  el estudio taxon\u00f3mico revel\u00f3 el predominio de saccharomyces cerevisiae en las fases media y final de la fermentaci\u00f3n, y de otras especies (s.Bayamus, t.Delbrueckii, p.Fermentans, p,membranifaciens, p.Anomala y h.Osmophila) al principio de la misma.  la selecci\u00f3n de levadura para elaboraci\u00f3n de vino se realiz\u00f3 mediante vinificaciones consecutivas a escala de laboaratorio, semiindustrial e industrial, en las que se evaluaron caracter\u00edsticas tecnol\u00f3gicas relacionadas con la capacidad fermentadora en distintas condiciones, las caracter\u00edsticas fisicoqu\u00edmicas de los vinos mediante
