Carmen <\/strong><\/h2>\n<p>Las infecciones por bacteriofagos son la principal causa de retraso en las fermentaciones l\u00e1cteas, lo que da lugar a p\u00e9rdidas econ\u00f3micas notables. para tratar de solventar dicho problema, en esta tesis se han seguido tres estrategias complementarias:  a,- selecci\u00f3n de cepas de lactococcus lactis resistentes a una colecci\u00f3n de fagos de origen industrial y con buenas cualidades tecnol\u00f3gicas.  b,- desarrollo de un m\u00e9todo r\u00e1pido de detecci\u00f3n de bacteriofagos en leche.  c,- detecci\u00f3n de cepas sensibles a fagos o lisog\u00e9nicas presentes en iniciadores comerciales.  a partir de un conjunto de 100 aislados de lc.Lactis silvestres se caracterizaron 16 cepas resistentes a 34 fagos de origen industrial que, a la vez, mostraron buenas cualidades para ser incluidas como iniciadores de la fermentaci\u00f3n l\u00e1ctea. Como confirmaci\u00f3n del dato anterior, se llevaron a cabo fabricaciones de queso en planta piloto, demostr\u00e1ndose que el producto resultante presentaba caracter\u00edsticas organol\u00e9pticas adecuadas incluso cuando se a\u00f1ad\u00eda fago a la leche de partida a una concentraci\u00f3n que provocaba el fracaso de la fermentaci\u00f3n en las cubas control.  complementariamente, se dise\u00f1aron m\u00e9todos para impedir la contaminaci\u00f3n por fagos en las cubas de fermentaci\u00f3n. El origen de dichos fagos puede ser la leche de partida o bien los fermentos que se le a\u00f1aden.
