Los m\u00fasculos estudiados fueron los siguientes: mn., Biceps femoris (bf), quadriceps femoris (cf), diaphragm (di), flexor digitorum (fd), gluteus medius (gm), infraspinatus (ie), longissimus lumborum (ll), longissimus thoracis (lt), psoas major (pm), pectoralis profundus (pp), semimembranosus (sm), semitendinosus (st), sternomandibularis (ster) and triceps brachii (tb). Para la consecuci\u00f3n del objetivo propuesto se plantearon los siguientes objetivos parciales:  a,- cuantificaci\u00f3n del tejido conjuntivo mediante el an\u00e1lisis qu\u00edmico del contenido en hidroxiprolina.  b,- estudio de la solubilidad del col\u00e1geno indicativa de la estabilidad t\u00e9rmica del mismo y paralelamente el an\u00e1lisis, por calorimetr\u00eda diferencial, de las caracter\u00edsticas de desnaturalizaci\u00f3n de esta prote\u00edna.  c,- valoraci\u00f3n instrumental y sensorial de la textura.  d,- utilizaci\u00f3n del an\u00e1lisis de imagen para cuantificar el tejido conjuntivo en los m\u00fasculos de una forma r\u00e1pida y eficaz, contemplando tanto la cantidad como la distribuci\u00f3n del tejido conjuntivo en los distintos m\u00fasculos.  se ha encontrado una elevada correlaci\u00f3n entre el contenido de col\u00e1geno total y esfuerzo m\u00e1ximo con la c\u00e9lula de warner-bratzler (r=0,723; p&lt;0,01) y entre el contenido de col\u00e1geno insoluble y esfuerzo m\u00e1ximo con la c\u00e9lula de warner-bratzler (r=0,661; p&lt;0,01), obteni\u00e9ndose adem\u00e1s diferencias significativas (p&lt;0,05) entre todos los m\u00fasculos evaluados y en los par\u00e1metros de: calorimetr\u00eda diferencial, longitud de sarc\u00f3meros, ph y color, sobresaliendo el m\u00fasculo di con valores bajos en esfuerzo m\u00e1ximo.
