Soledad Valdenebro Cerrej\u00f3n <\/strong><\/h2>\n<p>En el presente trabajo se ha realizado un estudio sobre la composici\u00f3n lip\u00eddica del caf\u00e9 tostado y verde. Se han considerado una serie de par\u00e1metros qu\u00edmicos como descriptores quimiom\u00e9tricos, que permiten diferenciar entre las dos variedades m\u00e1s utilizadas en el comercio. Coffea arabica y coffea canephora tienen distintas caracter\u00edsticas organol\u00e9pticas, siendo m\u00e1s apareciada la especie ar\u00e1bica. Ello repercute en el precio que alcanza en el mercado, que es superior al de la especie canephora, que comunmente se denomina robusta. Cuando los granos se han tostado es imposible diferenciar ambas especies mediante criterios visuales y, por lo tanto, hay que recurrir a otros procedimientos. El an\u00e1lisis qu\u00edmico, en combinaci\u00f3n con las t\u00e9cnicas de reconocimiento de patrones es muy adecuado para estos fines.  el contenido en \u00e1cidos grasos, triglic\u00e9ridos, tocoferoles y escualeno ha sido utilizado como descriptores qu\u00edmicos sobre los que se han aplicado t\u00e9cnicas de reconocimiento de patrones, como el an\u00e1lisis en componentes principales y el an\u00e1lisis discriminante lineal. Utilizando los contenidos de \u00e1cido ol\u00e9ico y linol\u00e9ico se consigui\u00f3 establecer una diferenciaci\u00f3n completa entre las dos especies, antes citadas. Aplicando an\u00e1lisis discriminante lineal a los contenidos de triglic\u00e9ridos se pudo discriminar entre las dos especies.
