En una segunda partes e intent\u00f3 correlacionar estos cambios composicionales con los fen\u00f3menos estructurales que tiene lugar durante esta operaci\u00f3n. Esta informaci\u00f3n ha resultado de mucha utilidad a la hora de analizar la respuesta del tejido frente cambios de tiempo, temperatura y concentraci\u00f3n en un intervalo en el que los mecanismos responsables de la transferencia de materia pueden ser muy diversos.  as\u00ed pues, se aborda el estudio del desarrollo de perfiles de concentraci\u00f3n durante la deshidrataci\u00f3n osm\u00f3tico de manzana. L\u00e1mina de manzana (var. granny smith) de 30 mm de espesor inicial, fueron sometidas a deshidrataci\u00f3n osm\u00f3tica con soluciones de sacarosa (45 y 55 brix) y temperaturas de 20, 30, 40 y 50\u00c2\u00bac. Despu\u00e9s del tratamiento es determinaron los perfiles de concentraci\u00f3n para agua y solutos. Se ha aplicado el modelo basado en el avance del frente de perturbaci\u00f3n, adf, que se fundamenta en la existencia de un plano virtual que separa en la muestra tratada dos zonas: la zona a, cercana a la interfase muestra-soluci\u00f3n osm\u00f3tica, en la cual el estado de concentraci\u00f3n inicial se ha visto perturbado por el tratamiento y la zona b donde no se ha dado cambios evidentes en la composici\u00f3n inicial del tejido. La composici\u00f3n de este plano virtual, d f, ha sido determinada conforme a dos m\u00e9todos de c\u00e1lculo. El primer m\u00e9todo se basa en trabajos de investigaci\u00f3n previos, mientras que en el presente trabajo se propone un m\u00e9todo alternativo al c\u00e1lculo del d f, teniendo en cuenta un mayor n\u00famero de datos experimentales del perfil composicional.
