En este trabajo estudiamos el efecto que presenta el nivel protaico y la composici\u00f3n de las dietas, el tama\u00f1o de la raci\u00f3n de alimento, la temperatura de cultivo y la inclusi\u00f3n de distintos niveles de cr2o3 en el alimento sobre la excreci\u00f3n de amonio total (at), la utilizaci\u00f3n del alimento y las prote\u00ednas de la dorada sparus aurata (una especie de inter\u00e9s comercial en el mar mediterr\u00e1neo y de forma especial en espa\u00f1a).  parece ser que el metabolismo de la dorada es controlado por factores nutricionales y ambientales, afectando sobre la excreci\u00f3n de amonio y la utilizaci\u00f3n de las prote\u00ednas dietarias. Un incremento de la temperatura, el tama\u00f1o de la raci\u00f3n y\/o el nivel proteico en la dieta, provoca un aumento significativo en las tasas de excreci\u00f3n de amonio. La excreci\u00f3n diaria de amonio encontrada para doradas menores a 45 gramos (450-500 mg n\/kg pez.D\u00eda) y de 115-150 grmaso (116 mg n\/kg pez.D\u00eda) coinciden con los niveles de
