Jos\u00e9 Noriega Dom\u00ednguez <\/strong><\/h2>\n<p>Se han estudiado vinos tintos j\u00f3venes monovarietales de la d.O. Navarra, elaborados con las variedades tempranillo, garnacha y cabernet sauvignon. los vinos se han obtenido del mercado, por lo que no se conocer el m\u00e9todo de vinificaci\u00f3n establecido para la elaboraci\u00f3n de cada uno de ellos.  las muestras han sido sometidas a an\u00e1lisis f\u00edsico-qu\u00edmicos b\u00e1sicos, as\u00ed como a los correspondientes a la determinaci\u00f3n de la composici\u00f3n polifen\u00f3lica, obteniendo, adem\u00e1s, su caracterizaci\u00f3n antoci\u00e1nica.  se llevaron a cabo los correspondientes an\u00e1lisis sensoriales, utilizando un panel de catadores seleccionados y previamente entrenados pero no especializados. se evalu\u00f3, en primer lugar, la tonalidad del color as\u00ed como otros siete atributos (intensidad del color, intensidad arom\u00e1tica, aroma frutal, aroma floral, acidez, astringencia y amargor) desde un punto de vista descriptivo. posteriormente, se efectu\u00f3 la evaluaci\u00f3n hed\u00f3nica de seis atributos: color, aroma, sabor, acidez, astringencia y evaluaci\u00f3n global.  los datos medios obtenidos han sido sometidos a diferentes t\u00e9cnicas estad\u00edsticas multivariantes.  la realizaci\u00f3n de los correspondientes an\u00e1lisis multifactoriales de la varianza, nos ha permitido examinar la influencia que sobre los distintos par\u00e1metros f\u00edsico-qu\u00edmicos y sensoriales evaluados ejercen tanto la variedad de uva como el a\u00f1o de vendimia. Este m\u00e9todo permite tener en cuenta el posible efecto que la interacci\u00f3n variedad-a\u00f1ada pueda ejercer en la aparici\u00f3n de diferencias significativas entre las distintas muestras.  la t\u00e9cnica de regresi\u00f3n m\u00faltiple paso a paso ha permitido, en primer lugar, estudiar la relaci\u00f3n existente entre la puntuaci\u00f3n global dada por nuestros catadores a los diferentes vinos y las variables sensoriales descriptivas evaluadas.
