{"id":18813,"date":"2002-04-09T00:00:00","date_gmt":"2002-04-09T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/calidad-de-la-carne-del-toro-de-lidia\/"},"modified":"2002-04-09T00:00:00","modified_gmt":"2002-04-09T00:00:00","slug":"calidad-de-la-carne-del-toro-de-lidia","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/quimica\/calidad-de-la-carne-del-toro-de-lidia\/","title":{"rendered":"Calidad de la carne del toro de lidia"},"content":{"rendered":"<h2>Tesis doctoral de <strong>  S\u00e1nchez Gonz\u00e1lez Carlos Isaac <\/strong><\/h2>\n<p>Los objetivos de este trabajo son, por una parte, tipificar la carne (longissimus thoracis) de reses lidiadas en la provincia de salamanca en el periodo 1998-2000 mediante sus caracter\u00edsticas tecnol\u00f3gicas, organol\u00e9pticas y microbiol\u00f3gicas, y por otra, realizar un an\u00e1lisis de residuos de medicamentos veterinarios en muestras biol\u00f3gicas (orina y plasma).  se determinan par\u00e1metros de calidad de carne como: ph, capacidad de retenci\u00f3n de agua, color, pigmentos hem\u00ednicos, terneza composici\u00f3n qu\u00edmica (componentes mayoritarios y minerales) y se realiza un an\u00e1lisis microbiol\u00f3gico de las canales mediante los par\u00e1metros fmvt y enterobacterias totales.  los resultados demuestran que la carne de los toros y novillos analizados no se puede considerar, de forma general, como carnes defectuosas por su ph. Tiene una apariencia m\u00e1s rojiza y oscura, mayor dureza, bajo contenido en l\u00edpidos y sodio, y mayor en zinc y calcio que la de otras razas bovinas espa\u00f1olas. Adem\u00e1s se observan deficientes condiciones higi\u00e9nicas y pr\u00e1cticas incorrectas en el faenado.  en el an\u00e1lisis de residuos, se optimiza un m\u00e9todo hplc en muestras de orina para la determinaci\u00f3n simult\u00e1nea de tranquilizantes (acepromacina, clorpromacina, propiopromacina, xilacina y haloperidol), el analg\u00e9sico narc\u00f3tico etorfina y su antagonista diprenorfina. Con los l\u00edmites de detecci\u00f3n obtenidos, del ordel de 1-2 ng\/ml, no se detecta ninguno de estos compuestos en las muestras tomadas.  se optimiza un m\u00e9todo hplc en muestras de plasma para la determinaci\u00f3n simult\u00e1nea de corticosteroides (dexametasona y betametasona) y antiinflamatorios no esteroides -aine- (fenilbutazona y flunixin). En este tipo de muestra de identifican fenilbutazona y flunixin, confirmando los resultados positivos mediante gc-ms.
