{"id":19261,"date":"2018-03-09T09:08:11","date_gmt":"2018-03-09T09:08:11","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/diferenciacion-de-mieles-basada-en-sus-caracteres-cromaticos-y-composicion-aminoaca%c2%addica-y-mineral\/"},"modified":"2018-03-09T09:08:11","modified_gmt":"2018-03-09T09:08:11","slug":"diferenciacion-de-mieles-basada-en-sus-caracteres-cromaticos-y-composicion-aminoaca%c2%addica-y-mineral","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/diferenciacion-de-mieles-basada-en-sus-caracteres-cromaticos-y-composicion-aminoaca%c2%addica-y-mineral\/","title":{"rendered":"Diferenciaci\u00f3n de mieles basada en sus caracteres crom\u00e1ticos y composici\u00f3n aminoac\u00eddica y mineral"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Ana Mar\u00eda Gonz\u00e1lez Param\u00e1s <\/strong><\/h2>\n<p>La miel es un producto biol\u00f3gico cuya compleja composici\u00f3n var\u00eda en funci\u00f3n de la flora de origen, la zona geogr\u00e1fica de procedencia, las condiciones climatol\u00f3gicas, el envejecimiento, etc&#8230;.  en castilla y le\u00f3n se estima que se produce anualmente aproximadamente 4.600 toneladas de este alimento, lo que representa el 18% del total nacional, de las que m\u00e1s de la mitad son producidas en la provincia de salamanca. sin embargo, a pesar de esta elevada producci\u00f3n, la miel de esta regi\u00f3n no cuenta con ning\u00fan tipo de protecci\u00f3n de calidad o de indicativo geogr\u00e1fico propio.  los objetivos de esta tesis son varios:  por un lado estudiar la composici\u00f3n mineral de las mieles producidas en 6 zonas de las provincias de salamanca, zamora y c\u00e1ceres con el fin de establecer una posible diferenciaci\u00f3n geogr\u00e1fica.  por otro lado, estudiar las caracter\u00edsticas crom\u00e1ticas y la composici\u00f3n aminoac\u00eddica de las mieles de encina, roble, casta\u00f1o y brezo, con el fin de conseguir una caracterizaci\u00f3n bot\u00e1nica de las mismas.  el estudio de la fracci\u00f3n mineral (17 cationes y 4 aniones) y la posterior aplicaci\u00f3n del an\u00e1lisis discriminante ha permitido clasificar correctamente, desde el punto de vista geogr\u00e1fico, el 86% de las muestras de las 6 zonas objeto de estudio. Cuando el n\u00famero de zonas queda reducido a las 3 de la provincia de salamanca, solo una de las muestras analizadas es clasificada incorrectamente (97%).  respecto a la caracterizaci\u00f3n de mieles con diferente origen bot\u00e1nico, la determinaci\u00f3n de 11 par\u00e1metros (2 amino\u00e1cidos, 7 relaciones de amino\u00e1cidos y 2 par\u00e1metros de color) permite la correcta clasificaci\u00f3n en los 4 tipos de miel para todas las muestras analizadas excepto una.  cuando se ensaya la discriminaci\u00f3n s\u00f3lo entre las mieles de encina y roble se clasifican con una certeza del 95%.
