<strong> Mar\u00eda  Isabel Estevez Puerto <\/strong><\/h2>\n<p>En este trabajo se han cuantificado la cantidad de antioxidantes totales de los tipos de vinos m\u00e1s significativos de jerez, obteni\u00e9ndose que el vino oloroso result\u00f3 el de mayor concentraci\u00f3n, siguiendo en concentraci\u00f3n el vino amontillado y el vino fino.  en el modelo biol\u00f3gico formado por 120 ratas wistars sometidas a un consumo moderado de estos vinos y de un extracto soluble en disoluci\u00f3n alcoh\u00f3lica de las semillas de uva palomino, con y sin ejercicio f\u00edsico moderado, se ha obtenido lo siguiente:  &#8211; la concentraci\u00f3n de antioxidante en suero no ha sufrido variaciones estad\u00edsticas en ninguno de los grupos ensayados.  &#8211; el consumo de alcohol no ha inducido hipertransaminasemia.  &#8211; el consumo moderado de los vinos a reducido significativamente el colesterol s\u00e9rico total, entre 20% y 29%.  &#8211; el extracto ha tenido una potente actividad biol\u00f3gica, manifestada por el mayor contenido de antioxidantes, un 17% superior y se ha comportado como el m\u00e1s potente hipocolesteromiante.  &#8211; la reducci\u00f3n de colesterol en los animales tratados con extracto de semillas y sometidos a ejercicio ha llegado a ser de un 34% frente a un 28% que se obtuvieron con los vinos.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de
