Para ello se han preparado mostos de distinta variedades alternativas a la monastrell, cultivadas en iguales condiciones edafoclimaticas. Las vinificaciones (9) se realizaron en tinto y rosado. El control del proceso se siguio analizando un total de 28 parametros analiticos durante la vinificacion y posterior almacenamiento durante 6 meses. La evolucion de los parametros permitio obtener criterios acerca del estado de maduracion de las uvas en el momento de la vendimia, rendimiento de la fermentacion, de los acidos, color, pigmentos antocianicos, polimeros, etc.  con respecto al color se destaca la incapacidad del sistema uxy de la c.I.E. (Metodo oficial) para diferenciar las vinificaciones en tinto, que si son diferenciadas claramente por el ciel*a*b*.  un detallado analisis estadistico de los resultados permitio establecer unas funciones de clasificacion que clasificaron correctamente las distintas vinificaciones con unicamente 9 de las 28 variables analiticas determinadas.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de
