Como variables f\u00edsico-qu\u00edmicas se estudiaron el grado alcoh\u00f3lico, la sacarosa, los az\u00facares reductores, aldeh\u00eddos, extracto seco reducico, acidez vol\u00e1til y caramelo colorante; como compuestos extra\u00edbles de la madera se estudiaron: aldeh\u00eddos fur\u00e1nicos (furfural, 5 hidroximetilfurfural), polifenoles (\u00e1cidos benzoicos, \u00e1cidos cin\u00e1micos, aldeh\u00eddos fen\u00f3licos) y cumarinas (umbeliferona, 4-metil-umbeliferona, escopoletina).  las conclusiones finales, fueron:  1,- los an\u00e1lisis f\u00edsico-qu\u00edmicos contemplados en la legislaci\u00f3n espa\u00f1ola actual, en lo que respecta al grado alcoh\u00f3lico, presencia de caramelo colorante, extracto seco, az\u00facares reductores, sacarosa, aldeh\u00eddos y acidez vol\u00e1til, no son suficientes para diferenciar una bebida que haya sufrido un proceso de envejecimiento natural en barriles de roble de una bebida fraudulenta u obtenida por adici\u00f3n de esencias y\/o extractos a un aguardiante base.  2,- por ello y en base a lo anterior urge la necesidad de que muestra legislaci\u00f3n alimentaria recoja, dentro de sus protocolos de an\u00e1lisis en materia de aguardientes envejecidos, la determinaci\u00f3n de compuestos propios del envejecimiento y que actualmente no se encuentran contemplados dentro de esta reglamentaci\u00f3n.
