<\/strong><\/h2>\n<p>El objetivo general de la presente tesis doctoral fue la evaluaci\u00f3n de la tecnolog\u00eda nirs para la clasificaci\u00f3n y autentificaci\u00f3n de canales de cerdo ib\u00e9rico, en base al r\u00e9gimen de alimentaci\u00f3n empleado durante la etapa de cebo.  para ello se optimiz\u00f3 la metodolog\u00eda de toma de muestras y se evaluaron los errores, mediante un ensayo colaborativo, del an\u00e1lisis de \u00e1cidos grasos mayoritarios en grasa de cerdo ib\u00e9rico.  se pusieron a punto metodolog\u00edas para la obtenci\u00f3n de informaci\u00f3n espectrosc\u00f3pica nir en grasa de cerdo ib\u00e9rico, tanto fundida como tejido adiposo subcut\u00e1neo, mediante la modalidad de doble transmisi\u00f3n e interactancia-reflectancia, empleando en este \u00faltimo caso una sonda de fibra \u00f3ptica acoplada al instrumento nir.  se desarrollaron y evaluaron ecuaciones de calibraci\u00f3n nirs para la predicci\u00f3n del contenido en \u00e1cidos grasos mayoritarios y minoritarios en grasa fundida y tejido adiposo subcut\u00e1neo de cerdo ib\u00e9rico.  se desarrollaron y evaluaron, mediante diferentes algoritmos de clasificaci\u00f3n (an\u00e1lisis discriminante can\u00f3nico, lineal, cuadr\u00e1tico, simca y discriminante basado en regresi\u00f3n), modelos quimiom\u00e9tricos multivariantes para la clasificaci\u00f3n de canales de cerdo ib\u00e9rico en base a datos de composici\u00f3n en \u00e1cidos grasos e informaci\u00f3n espectral nir per se, tanto de muestras de grasa fundida como de tejido adiposo subcut\u00e1neo.  se dise\u00f1o y valid\u00f3 con \u00e9xito una metodolog\u00eda de estandarizaci\u00f3n de instrumentos nirs y transferencia de calibraciones para la predicci\u00f3n del contenido en \u00e1cidos grasos en grasa fundida de cerdo ib\u00e9rico entre diferentes instrumentos ubicados en un mismo o en diferentes laboratorios.  los resultados obtenidos, tanto en la predicci\u00f3n del contenido en \u00e1cidos grasos como en la obtenci\u00f3n de modelos de clasificaci\u00f3n a partir de informaci\u00f3n espectral nir per se, muestran el gran potencial de la tecnolog\u00eda nirs para sustituir a
