Para ello se ha llevado a cabo un estudio de la contaminaci\u00f3n de microorganismos esporulados durante la l\u00ednea de elaboraci\u00f3n de un plato preparado, seleccion\u00e1ndose clostridium sporogenes como microorganismo de referencia. A continuaci\u00f3n se ha evaluado la temperatura de recuperaci\u00f3n \u00f3ptima de recuperaci\u00f3n de endosporas de este microorganismo sometidas a tratamiento t\u00e9rmico, as\u00ed como dos sistemas para aplicar estos tratamientos, tubos capilares o el termorresist\u00f3metro tr-sc, es tamp\u00f3n fosfato como medio de referencia.  por otro lado, se ha estudiado el efecto del substrato de alimento sobre la termorresistencia de clostridium sporognes pa3679 tanto en condiciones de calentamiento isot\u00e9rmico como no isot\u00e9rmico. Se han obtenidos los datos cin\u00e9ticos en las distintas condiciones ensayadas, determin\u00e1ndose los m\u00e9todos m\u00e1s precisos para cada una de las condiciones ensayadas.  finalmente, se han establecido predicciones del grado de inactivaci\u00f3n microbiana alcanzado en funci\u00f3n de los par\u00e1metros cin\u00e9ticos obtenidos en condiciones isot\u00e9rmicas y no isot\u00e9rmicas, determin\u00e1ndose la metodolog\u00eda m\u00e1s adecuada, as\u00ed como la exactitud de las predicciones. Estos datos permiten una optimizaci\u00f3n segura, basada en c\u00e1lculos cient\u00edficos, de los procesos de esterilizaci\u00f3n a aplicar en platos preparados de baja
