Se ha escogido la peroxidasa como enzima base para desarrollar biosensores que, mediante el acoplamiento de diversas reacciones enzim\u00e1ticas, puedan ser utilizados para la determinaci\u00f3n r\u00e1pida y fiable de analitos de inter\u00e9s en la industria alimentaria.  las matrices desarrolladas son las constituidas por grafito y tefl\u00f3n y carbono v\u00edtreo reticulado y resina epoxi (rvc). En ambos casos el dise\u00f1o implica la inmovilizaci\u00f3n de varias enzimas junto con un mediador adecuado para cada medio de trabajo utilizado, en todo el vol\u00famen de la matriz. con este tipo de dise\u00f1o se debe favorecer un \u00edntimo contacto entre la\/s enzima\/s, el mediador y la fase conductora del electrodo comp\u00f3sito (grafito o carbono v\u00edtreo reticulado dependiendo del tipo de electrodo que se trate) y se consigue, adem\u00e1s, un dep\u00f3sito tridimensional de elemento de reconocimiento biol\u00f3gico de f\u00e1cil regeneraci\u00f3n superficial y, en principio, compatible tanto con medios acuosos como predominantemente no acuosos.  las matrices de grafito-tefl\u00f3n-peroxidasa mediador y rvc-resina exposi-peroxidasa-mediador se han dise\u00f1ado, desarrollo, optimizado y evaluado en medios acuosos y predominantemente no acuosos. A partir de estas matrices se han desarrollado bionsensores bienzim\u00e1ticos comp\u00f3sitos para la determinaci\u00f3n de glucosa, hipoxantina, colesterol, metanol y etanol y establecido metodolog\u00edas para la determinaci\u00f3n de estos analitos en alimentos de diversas caracter\u00edsticas.  por \u00faltimo, se ha evaluado la posibilidad de utilizar biosensores comp\u00f3sitos de
