Francisca <\/strong><\/h2>\n<p>En esta tesis se han llevado a cabo estudios encaminados al desarrollo de procedimientos anal\u00edticos para el requirimiento de diferentes compuestos cuya determinaci\u00f3n en alimentos grasos resulta de inter\u00e9s.  as\u00ed, el enranciamiento, uno de los problemas de estos alimentos y causa de deterioro de los mismos, es evitado por la presencia de antioxidantes, bien naturales o sint\u00e9ticos, en concreto de tocoferoles. Se han desarrollado m\u00e9todos para analizar dichos compuestos, basados en el car\u00e1cter reductor de los mismos, y por tanto en las se\u00f1ales que se obtienen en su oxidaci\u00f3n electroqu\u00edmica en electrodos de carb\u00f3n unificado haciendo uno adem\u00e1s de t\u00e9cncias de an\u00e1lisis multivariante para la determinaci\u00f3n de mezclas de tales compuestos.  por otro lado uno de los alimentos grasos cuya producci\u00f3n resulta de mayor inter\u00e9s en nuestra regi\u00f3n, y con mayores beneficios saludables es el aceite de oliva. Su producci\u00f3n requiere un caso creciente de productos fitosanitarios para optimizar el cutlivo de la aceituna.  entre estos, en los nuevos olivares de regad\u00edo es muy necesaria la utilizaci\u00f3n de lbermicidas, cuyos residuos pueden pesar a la cadena alimentaria, sobre todo a trav\u00e9s de las agua de riego.  por ello, se han propuesto m\u00e9todos anal\u00edticos para el control de dichos residuos, en concreto de dicnat y glifoseto.
