<\/strong><\/h2>\n<p>En esta tesis se han llevado a cabo estudios encaminando al desarrollo de procedimientos anal\u00edticos para el seguimiento de diferente compuestos cuya determinaci\u00f3n en alimentos grasos resulta de interes.As\u00ed , el enracinamiento uno delos problemas de estos alimentos y causa de deterioro de los mismos , es evitado por la prosencia de antiox\u00eddantes, bien naturales \u00f3 sinteticos.En concreto de focoferoles y pupigralado,antiocianisol, pulibhoxitolmenco respectivamente.Se han desarrollado m\u00e9todo para analizar dichos compuestos , beseros en el caract\u00e9r reductor de los mismos , y por tnato en las se\u00f1ales que se obtienen en su oxidaci\u00f3n electroqu\u00edmica en electodos de carb\u00f3n vinificado haciendo uno adem\u00e1s de t\u00e9cnicas de analisis multivariante para la determinaci\u00f3n de mezclas de tales compuestos , por otrolecto uno de los alimento grasos cuya pubduci\u00f3n se  de mayor inter\u00e9s en nuestra regi\u00f3n y con mayores beneficios saludables es el aceite de oliva.Su produci\u00f3n rebre un uso creciente de productos fitosemiterios para optimar el cultivo de aceite.Entre estos , en los nuevos olivares se regad\u00edo es muy necesaria la utiliazaci\u00f3n de &#8212; cuyos residuos y pueden pesar ala cadena alimentaria , sobre todo a trav\u00e9s de las aguas de riego.  por ello se han propuesto metodos analiticos para el cocitrol de dichos residuos , en concreto de dicuat y gletoseto.Y por \u00faltimos se examina la utilizacion es habitual en acetites, en nuestro como acetites
