En este trabajo se estudia el proceso de hidr\u00f3lisis de las prote\u00ednas de lactosuero bovino (wpc) con una mezcla de proteasas de origen bacteriano y animal.  se ha puesto de manifiesto que el seguimiento y control continuo del proceso de hidr\u00f3lisis puede realizarse mediante el consumo de base necesaria para mantener constante el ph en el reactor y que el pk medio de los grupos liberados en la hidr\u00f3lisis depende de ph seg\u00fan la ecuaci\u00f3n:  pk= 3.8 + 0.45 ph  se ha propuesto un modelo cin\u00e9tico te\u00f3rico que introduce como par\u00e1metros un factor de reactividad, calculando para 50, 60 y 70\u00c2\u00bac, un factor de accesibilidad de los enlaces a hidrolizar y el n\u00famero m\u00e1ximo de estos enlaces. Este modelo explica los resultados obtenidos a ph = 8 y s0 = 5% w\/w con un error medio inferior al 6%.  se ha propuesto tambi\u00e9n un modelo emp\u00edrico estructurado de dos redes neuronales de tipolog\u00eda 4-5-6 y 1-2-1 que explican los resultados obtenidos a ph = 8, s0 =5-15% w\/w, t = 50-70\u00c2\u00bac, eo pem = 0.06-1.93 g\/l con un error medio inferior al
