Como la lipoperoxidaci\u00f3n de lipoprote\u00ednas de baja densidad (ldl) es un elemento clave en las etapas iniciales de la formaci\u00f3n de la placa de ateroma, el aceite de pescado de la dieta resulta un factor potencialmente proaterog\u00e9nico. As\u00ed, este efecto debe ser contrarrestado por otros mecanismos que expliquen la propiedad general antiaterog\u00e9nica. a partir de los dos grupos principales de agpi, omega-6 i omega-3 se sintetizan dos series que presentan efectos biol\u00f3gicos diferentes. Una de las acciones de los agpi relacionadas con la aterog\u00e9nesis es la modulaci\u00f3n de la producci\u00f3n de radicales libres (como el \u00f3xido n\u00edtrico (no), sintetizado por el enzima enos del endotelio vascular, de efecto relajante).  para estudiar los efectos de la suplementaci\u00f3n de la dieta con agpi omega-6 o con agpi omega-3 en vasos sangu\u00edneos y en lipoprote\u00ednas plasm\u00e1ticas, se alimentaron ratas sprague-dawley con una dieta rica o bien en aceite de ma\u00edz (5%), o bien en aceite de pescado (5%). Despu\u00e9s del per\u00edodo alimenticio, se sacrificaron los animales y se extrajo la sangre y la aorta.  los estudios de ba\u00f1o de \u00f3rganos nos permitieron observar un aumento en la relajaci\u00f3n inducida por acetilcolina y mediada por no en las ratas alimentadas con la dieta de aceite de pescado. La suplementaci\u00f3n con aceite de pescado tambi\u00e9n aumentaba la producci\u00f3n basal de no (valorada por resonancia electr\u00f3nica de spin), a trav\u00e9s de la estimulaci\u00f3n de la expresi\u00f3n del arnm y de la prote\u00edna de enos.  la dieta de aceite de pescado no indujo cambios en la movilidad electrofor\u00e9tica de la fracci\u00f3n de vldl+ldl (\u00edndice de la oxidaci\u00f3n nativa).
