El primer factor corresponde a las propiedades mec\u00e1nicas y t\u00e9rmicas de las fases individuales que lo componen, y el segundo a la topolog\u00eda de la microestructura que conforman dichas fases. La informaci\u00f3n que se puede obtener de secciones bidimensionales no es suficiente para definir completamente la estereolog\u00eda de uan microestructura tridimensional.  esta tesis propone tres modelos para simular la evoluci\u00f3n de la microestructura de los helados durante su fabricaci\u00f3n. Se simula el proceso de solidificaci\u00f3n en el armario de congelaci\u00f3n (blast freezer) que experimentan las part\u00edculas de hielo previamente generadas en el mantecador (barrel freezer). Todos los modelos propuestos se han implementado en programas inform\u00e1ticos para estudiar sus comportamientos.  el primer modelo emplea una descripci\u00f3n anal\u00edtica de la microestructura y supone que las part\u00edculas de hielo son esf\u00e9ricas. La evoluci\u00f3n de \u00e9stas se simula incrementando su tama\u00f1o y controlando los \u00e1ngulos diedro que aparecen entre ellas.  el segundo modelo est\u00e1 basado en t\u00e9cnicas de monte carlo. Este modelo simula la evoluci\u00f3n de una versi\u00f3n discretizada de la microestructura obtenida del mantecador. El modelo tiene en cuenta la concentraci\u00f3n de az\u00facar en la matriz y su difusi\u00f3n.  el \u00faltimo modelo desarrollado es determinista. Trabaja con una versi\u00f3n discretizada de la microestructura. La evoluci\u00f3n de dicha microestructura se simula creciendo capas is\u00f3tropas de hielo alrededor del las part\u00edculas s\u00f3lidas iniciales. Estas capas crecen teniendo en cuenta la concentraci\u00f3n de az\u00facar en la matriz l\u00edquida. El modelo es capaz de determinar el tiempo necesario para crecer cada capa.  la principal ventaja del primer modelo es su rapidez y capacidad para simular grandes microestructuras.
