Las aplicaciones de los colorantes naturales aumentar\u00e1n en la medida que se reduzcan sus precios y se descubran nuevas materias primas, con un poder colorantes elevado y costes bajos de producci\u00f3n. teniendo en perspectiva el aumento de fuentes de colorantes naturales aplicables a alimentos manufacturados, fuente de patrones y aditivos con doble funci\u00f3n se ha investigado los frutos de bagua\u00ed\u00a7u (eugenia umbelliflora berg). Se han estudiado las condiciones \u00f3ptimas de extracci\u00f3n, la elecci\u00f3n de disoluciones extractantes eficientes, la separaci\u00f3n y purificaci\u00f3n usando dos m\u00e9todos diferentes as\u00ed como la identificaci\u00f3n mediante una variedad de t\u00e9cnicas. pigmentos antocianos de bayas de bagua\u00ed\u00a7u, un fruto tropical de origen de brasil, fueron extra\u00eddos con hci al 0,1% en etanol y purificados por columna de amberlite xad-7.  seis principales antocianos fueron aislados por clae separativa y su estructura qu\u00edmica fue identificada por m\u00e9todos espectrosc\u00f3picos (tlc, uv-visible, ms y 1h-rmn). Delfinidina 3-o-beta-glucopiranosa, peonidina 3-o-beta-glucopiranosa y malvidina 3-o-beta-glucopiranosa fueron identificados. Con  bases en los datos cromat\u00f3graficos el contenido total de antocianos fue de 342,44 mg en 100 g de frutos frescos. Por lo tanto, la identificaci\u00f3n de seis principales antocianos en este fruto nos llevan a creer que el bagua\u00ed\u00a7u puede resultar una prometedora fuente de pigmentos naturales, con potente
