La presencia de etanol y de azucares en la subfase confiere inestabilidad a la monocapa, mientras que las monocapas mixtas son mas estables. La inestabilidad de la monocapas esta intimamente relacionada con su estructura. La idealidad del proceso de mezcla interfacial, asi como la miscibilidad de las moleculas en las monocapas mixtas y la espontaneidad del proceso de mezcla se han analizado desde un punto de vista
