La actividad oleato desaturasa microsomal (ods) aumento singificativamente \u00abin vivo\u00bb e \u00abin vitro\u00bb cunado la temperatura descendio a 10 c. Durante algunas horas. Este aumento de la actividad fue inhibido por cicloheximida, sugiriendo que la introduccion de la ods requiere sintesis de proteinas, posiblemente de la propia enzima o alguna proteina activadora de la misma, tambien se ha observado que los triacilgliceridos son metabolicamente activos durante la formacion de las semillas, ya que actuan como donadores del acido oleico, sutrato de la ods, durante la induccion de la actividad por frio.  mediante estudios comparativos por electroforesis bidimensional, se ha detectado varios polipeptidos microsomales que podrian estar relacionados con la actividad ods y su regulacion por temperatura. Por otro lado, la actividad ods microsomal descendio tras someter a las semillas a cortos periodos a alta temperatura (30 c).
