Dicho producto se elabora a partir de leche cruda de vaca, sin la adici\u00f3n de ning\u00fan cultivo iniciador, siendo puesto a la venta a los pocos d\u00edas de su elaboraci\u00f3n y en condiciones de temperatura ambiental. Los estudios de calidad higi\u00e9nico-sanitaria de quesos elaborados en brasil son muy escasos y el queso colonial no hab\u00eda sido apenas estudiado hasta la fecha. En base a estos hechos se plante\u00f3 el presente trabajo, con una definici\u00f3n inicial del producto, la determinaci\u00f3n de los par\u00e1metros f\u00edsico-qu\u00edmicos de mayor significado microbiol\u00f3gico, para abordar a continuaci\u00f3n el an\u00e1lisis de los principales grupos microbianos (flor aerobia mes\u00f3fila, coliformes y coliformes fecales, enterococos) y agentes bacterianos pat\u00f3genos de inter\u00e9s en un queso fresco de las caracter\u00edsticas citadas (salmonella spp., Staphylococcus aureus, listeria monocytogenes). Se analizaron 100 muestras de leche y 100 muestras de queso recogidas en un total de 65 granjas de las zonas de litoral y la monta\u00f1a del estadio de rio grande del sur.  los resultados del estudio indicaron una calidad higi\u00e9nico-sanitario de la leche adecuada para la elaboraci\u00f3n del queso colonial, particularmente la leche de la regi\u00f3n de la monta\u00f1a, donde las condiciones higi\u00e9nicas del orde\u00f1o son mejores, con ausencia de salmonella spp. Y l.Monocytogenes, aunque s\u00ed se hall\u00f3 s.Aureus, consider\u00e1ndose aconsejable la aplicaci\u00f3n de un tratamiento t\u00e9rmico de pasterizaci\u00f3n para asegurar su inocuidad antes de destinarla a la elaboraci\u00f3n de queso fresco.  con respecto al queso, podr\u00eda destacarse la ausencia de salmonella y l.Monocytogenes, hall\u00e1ndose l. Innocua, y la presencia en un porcentaje elevado de las muestras de s.Aureus.
