Jose <\/strong><\/h2>\n<p>Se pone a punto un metodo polarografico de determinacion del contenido de acido ascorbico, aplicable a muestras de peque\u00f1o tama\u00f1o. Este metodo es util para el estudio: de la variacion del contenido de acido ascorbico en los esparragos durante la recoleccion, asi como de la cinetica de degradacion en el almacenamiento y el tratamiento termico alta-corto.  los valores obtenidos en la determinacion de los parametros analiticos indican que el metodo puesto a punto es util para la determinacion de acido ascorbico en muestras de 50 ul.
