Por ello se ha estudiado la evolucion del contenido y peso molecular del b-glucano durante la germinacion del grano de cebada asi como la evolucion de las actividades enzimaticas que presuntamente estan implicadas en la degradacion del b-glucano: la carboxipeptidasa y la b-glucanasa.  la tecnica empleada para la determinacion de b-glucano ha sido el sistema calcofluorfia. Basandose en esta misma tecnica se han desarrollado nuevas metodolog\u00edas que permitieran ademas, la determinacion del peso molecular promedio del b-glucano y de actividades b-glucanasa en malta. Estas metodolog\u00edas se han aplicado al estudio del proceso de germinacion y han permitido concluir que la actividad b-glucanasa por si sola es capaz de explicar la degradacion del
