Con este fin se ha desarrollado un medio selectivo para el aislamiento de mutantes deficientes en actividad malolactica. La disponibilidad de estos mutantes ha permitido demostrar que el acido malico actua como activador del consumo de glucosa.  por otra parte, se ha demostrado que es posible transferir conjugativamente los transposones tn916 y tn925 asi como los plasmidos conjugativos pva797 y pip501 a esta especie.
