P\u00eda <\/strong><\/h2>\n<p>La prote\u00ednas pueden fijar los compuestos responsables del aroma afectando as\u00ed las propiedades sensoriales de los alimentos. La fijaci\u00f3n de los compuestos vol\u00e1tiles por las prote\u00ednas resulta a veces deseables, ya que permite utilizar las prote\u00ednas como transportadores del aroma o modificadores del aroma y sabor en los alimentos.  en este trabajo se estudia la interacci\u00f3n de ocmpuestos representativos del aroma del jam\u00f3n curado con componentes de la matriz proteica de la carne: dip\u00e9ptido (carnosina y anserina) y prote\u00ednas sarcopl\u00e1smaticas (mioglobina), mediante la t\u00e9cnica de microextracci\u00f3n en fase s\u00f3lida (spme).  para ello, en primer lugar se optimiza la t\u00e9cnica de microextracci\u00f3n en fase s\u00f3lida para el an\u00e1lisis cualitativo y cuantitativo de los compuestos vol\u00e1tiles presentes en el espacio de cabeza de jam\u00f3n curado. Se debe tener presente que existen muchos factores que afectan dicha extracci\u00f3n tales como el tipo de fibra, la volatilidad y la masa molecular de los compuestos vol\u00e1tiles. Se eval\u00faa la extracci\u00f3n de los compuestos vol\u00e1tiles con diferentes tipos de fibra. La fibra bipolares de car\/pdms y dvb\/car\/pdms, son capaces de extraer 70 compuestos vol\u00e1tiles distintos. As\u00ed, en el espacio de cabeza de jam\u00f3n curado la fibra de dvb\/car\/pdms extrae mayoritariamente hexanal (18%) y 2-pentanona (10%) mientras que los compuestos extra\u00eddos de forma mayoritaria por la fibra de car\/pdms son 3-metil-butanal (19,8%) y 2-metil-butanal (17,7%) seguido de hexanal (7%) y 2-pentanona (8%).  en el estudio de interacci\u00f3n entre compuestos vol\u00e1tiles y proteicos con la t\u00e9cnica de microextracci\u00f3n en fase s\u00f3lida se obtiene interacci\u00f3n entre la carnosina con todos los compuestos vol\u00e1tiles estudiados excepto con la 2-pentanona. La anserina presenta interacci\u00f3n con 2-metil-butanal, 3-metil-butanal, hexanal y metional. Por \u00faltimo, la mioglobina solo presenta interacci\u00f3n con 2-metil-butanal y hexanal.
