Se pretende obtener un conjunto de alcoholes fen\u00f3licos, derivados de fenilpropaniodes, para evaluar sus propiedades antioxidantes. Seleccionar, entre otros, los mejores candidatos en la estabilizaci\u00f3n de matrices reales (aceite, emulsi\u00f3n), y sintetizar qu\u00edmica y enzim\u00e1ticamente, nuevos antioxidantes lipof\u00edlicos, mediante su esterificaci\u00f3n con \u00e1cidos grasos de distinta naturaleza y longitud. Se estudian las propiedades antioxidantes de las nuevas mol\u00e9culas, y se establecen los criterios estructurales que rigen su actividad y se eval\u00faa su posible inclusi\u00f3n en alimentaci\u00f3n.  por \u00faltimo lugar, se ha realizado un estudio mediante qu\u00edmica org\u00e1nica computacional para buscar par\u00e1metros te\u00f3ricos que determinen el coportamiento antioxidante de los alcoholes fen\u00f3licos de partida y disponer de una herramienta eficaz en la b\u00fasqueda de nuevas mol\u00e9culas.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
