<\/strong><\/h2>\n<p>Desde la antig\u00ed\u00bcedad se conoce que los alimentos con mayor contenido en humedad han sido los m\u00e1s perecedores de manera que su control es una herramienta para su conservaci\u00f3n.El efecto indeseable del agua en los alimentos se debe a que la estabilidad de los mismos est\u00e1 directamente relacionada con la actividad del agua y a pesar de que sus efectos sobre el crecimiento microbiano, las reacciones qu\u00edmicas y la actividad enzim\u00e1tica, han sido ampliamente documentados, dicho concepto de actividad del agua como indicador del deterioro de un alimento tambi\u00e9n ha sido cuestionado en los \u00faltimos a\u00f1os por diversos autores, aunque se sigue considerando su gran relaci\u00f3n con la estabilidad de los mismos.  esta tesis pretende establecer una nueva aportaci\u00f3n al estudio de la actividad del agua, por lo qu se procedi\u00f3 a la predici\u00f3n de la misma mediante el empleo del m\u00e9todo asog, basado en el concepto de contribucci\u00f3n de grupos.Para ello se determinaron los valores experimentales de la actividad del agua a distintas etemperaturas pr\u00f3ximas a la temperatura ambiente.Se ad\u00e1pto el m\u00e9todo asog de modo que permita precedir la actividad del agua de disoluciones acuosas que contengan azucares, polioles , sales , mezclas de los tres compuestos y \u00e1cidos org\u00e1nicos.Se definieron nuevos grupos para el m\u00e9todo asog, qu tuviesen en cuenta las peculiaridades de dichos compuestos y se determinaron los par\u00e1metros caracteristicos del m\u00e9todo utilizado datos de la actividad del agua experimentales y calculos a partir de propiedades coligativas.El m\u00e9todo permite, adem\u00e1s de la predicci\u00f3n de la actividad del agua, calcular descensos
