En algunos casos, estos subproductos llegan a suponer el alrrededor del 60% del material vegetal, como es el caso de la producci\u00f3n de alcachofa en conserva. En general los residuos de la manipulaci\u00f3n y comercializaci\u00f3n de hortalizas han sido valorizados como aliemientos para el ganado, producci\u00f3n de fibra alimenticia y fuel. En los \u00faltimos a\u00f1os, algunos estudios han propuesto algunos subproductos vegetales como fuente de antioxidantes naturales los cuales podrian ser empleados en alimentaci\u00f3n, farmacia, etc. El objetivo de esta tesis is obtener diferentes extractos a partir de residuos de lechuga, alcachofa y colifor para evaluar su rendimento (g extracto \/kg subproducto) asi como su contenido fen\u00f3lico (mg\/g extracto y mg\/kg subproducto). Adem\u00e1s, se evaluara la actividad antioxidante de los extractos para poder establecer el potencial papel de estos residuos como fuente de sustancias beneficiosas para la salud (polifenoles)  the caning houses and food processing industry dealing with vegetables produce large amounts of wastes and residues (leaves, stems, wastewaters, etc.). Sometimes, these by-products can reach around 60% of harvested vegetal as in the case of the industrial manipulation of artichoke. In general, by-products from handling and commercialization of vegetables have been traditionally valorized as animal feedstuff fiber production and fuel production. in the last years, a number of studies have proposed some vegetal by-products (grape, apple, cocoa, etc) as source of natural antioxidants which could be used in the food, pharmaceutical, dietetic and cosmetic industries, in order to valorize these wastes. The aim of this thesis is to obtain different extracts from lettuce, broccoli, celery, artichoke and cauliflower by-products to evaluated their yield (mg of extract\/kg of fresh by-product) as well as
