Se realiza tambien la determinacion de la composicion quimica de los vinos investigados. Seguidamente, se procede a la investigacion de la produccion de metabolitos acetoinicos por las especies de levaduras aisladas contemplando la influencia de los distintos parametros fisico-quimicos sobre dicha biosintesis. A continuacion, se determinan los niveles de aminoacidos libres e histamina en las criaderas, analizandose tambien la capacidad de sintesis de dichos compuestos por las cepas seleccionadas. Por ultimo se lleva a cabo la seleccion de las levaduras mas idoneas para el desarrollo de la crianza biologica realizando tambien la identificacion molecular mediante tecnicas pcr de las cepas de
