El procesdo de estas hortalizas aumenta su intensidad respiratoria en funcion de la severidad del da\u00f1o producido.  la maxima tasa respiratoria se observa tras las operaciones de procesado del producto como respuesta al da\u00f1o mecanico, para ir posteriormente disminuyendo durante el almacenamiento.  la lechuga iv gama requiere profundas modificaciones de la atmosfera del envase que reduzcan o inhiban el pardeamiento observado en el tejido con los films mas permeables. Las lechugas del tipo iceberg presentan mayor potencial de conservacion que las del grupo romana, superandolas en 3-4 dias. La aparicion de malos olores ligados a elevados niveles de etanol en el tejido, determina el final de su periodo de vida util. La alta intensidad respiratoria de la zanahoria rallada condiciona la eleccion de films de alta permeabilidad que impidan superar niveles de co2 20% y de o2&lt;1%, responsables de procesos fermentativos que originan malos olores e incrementan el nivel de exudados, acortando bruscamente su periodo de conservacion. El amarilleamiento de los florets de broculi, causante de su rapido deterioro, es inhibido con el envasado en am con films de alta permeabilidad, que retienen sus caracteristicas de calidad durante 21 dias a 5-7 grados c. La fenilalanina amonio liasa (pal, ec 4.3.1.5) es la enzima clave en el pardeamiento observado en el tejido de lechuga minimamente procesado. Su control mediante am es efectivo para impedir esta alteracion en el producto. La utilizacion de modelos matematicos permite un mejor dise\u00f1o de los envases mas adecuados para las caracteristicas fisiologicas y de calidad de los productos
