Utiel-requena). Se ha estudiado las variaciones producidas en la calidad de los referidos vinos en funcion del tiempo de embotellado. Se ha evaluado de comportamiento de las variedades consideradas. Para ello, se realizo el estudio durante un periodo de 2 a\u00f1os a partir del embotellado. Se efectuo controles analiticos referentes a: (1) analisis fisico-quimicos, (2) apreciacion sensorial (3) analisis de compuestos fenolicos y (4) medida de color.  se concluye que las variedades estudiadas se definen correctamente segun dos funciones discriminantes altamente significativas. En relacion al contenido de los compuestos fenolicos, las tres variedades presentaron diferencias significativas. Los vinos de las variedades consideradas se diferenciaron en los valores de los parametros cromaticos: -luminosidad, componente roja, componente amarilla angulo de tono y croma.  se aprecio una diferencia varietal respecto a los valores de los indices de color: intensidad de color, tonalidad e intensidad colorante.  en relacion a la apreciacion sensorial, los vinos varietales de monastrell y tempranillo muestran una mejora organoleptica durante los dos a\u00f1os de seguimiento, mas uniforme en estos ultimos, que posiblemente continuara durante periodos de tiempo superiores. Los vinos varietales de bobal alcanzan su punto optimo al a\u00f1o de envejecimiento.
