Carmen <\/strong><\/h2>\n<p>Se han estudiado dos modalidades alternativas al proceso de liofilizacion con el objetivo de rentabilizar dicha operacion: la deshidratacion a vacio con fusion controlada (dvfc), y la liofilizacion por inmersion en medio adsorbente (lima). Han sido establecidos similes alimenticios a partir del estudio calorimetrico de productos naturales, empleando como parametros comparativos la temperatura de fusion, temperatura de fusion incipiente y entalpia de cambio de estado. Ha sido empleada la conductividad electrica del material como parametro de control del estado de fusion del producto durante la dvfc y planteadas estrategias operacionales con las que se reduce en mas de un 35% el tiempo de operacion.  en relacion con el proceso lima, han sido analizados diferentes adsorbentes, evaluando su capacidad y calor de adsorcion.
