La edad de maduracion de los quesos comerciales calculada mediante estas dos tecnicas fue superior a 100 dias. El estudio de la microbiota acido-lactica revelo que las especies predominantes en quesos manchegos de d.O. Del mercado son: lb. Plantarum, lc. Lactis subsp. Lactis, lb. Casei subsp. Casei, le. Mesenteroides subsp. Dextranicum y le.  mesenteroides subsp. Mesenteroides. De los aislados seleccionados, nueve presentaron las mejores propiedades de interes tecnologico (act.
