Una vez conocida la distribucion de las cepas y su diversidad en las bodegas, se estudiaron las propiedades enologicas de cada una de ellas, ensayandose la velocidad de fermentacion, la produccion de sh2, la tolerancia al so2 y a presiones osmoticas elevadas, la tolerancia al etanol y la produccion de la toxina killer. Posteriormente, se analizaron las caracteristicas enzimaticas de cada una de ellas, investigandose la presencia de esterasas, proteasas, glicosidasas y pectinasas.
