La fracci\u00f3n de baja masa molecular presenta un perfil de separaci\u00f3n diferente para las cinco variedades vin\u00edferas estudiadas: pinot noir, chardonnay, macabeu, xarel. Lo y parellada. Se observa una disminuci\u00f3n de la concentraci\u00f3n de prote\u00edna a lo largo del proceso de vinificaci\u00f3n, que afecta a todas las fracciones separadas; siendo m\u00e1s acusada en las fracciones de 20-30 kda de m\u00e1s carga el\u00e9ctrica, lo que se explica por su mayor reactividad frente a los compuestos cargados negativamente en el vino. Se ha estudiado la influencia del tiempo de contacto con las l\u00edas sobre las diferentes fracciones de prote\u00ednas sin observar ninguna variaci\u00f3n. Durante la maduraci\u00f3n se ha detectado un incremento de la concentraci\u00f3n de prote\u00edna de inferior masa molecular, mientras que la fracci\u00f3n de 60 kda se mantiene en concentraciones similares durante todo el periodo estudiado. De la fracci\u00f3n de 20 a 30 kda se ha constatado un incremento mayor de las prote\u00ednas con menos carga. Despu\u00e9s de analizar la separaci\u00f3n de la fracci\u00f3n de baja masa molecular por intercambio cati\u00f3nico de las cinco variedades durante dos a\u00f1os, se observan perfiles caracter\u00edsticos para cada variedad que permiten clasificar las variedades apuntando a una posible caracterizaci\u00f3n varietal.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
