La estabilidad de las composiciones se midi\u00f3 de forma cuantitativa mediante conductividad en funci\u00f3n del tipo. Tambien se determinaron las tensiones interfaciales entre las fases continua y dispersa de las emulsiones-gel y se relacionaron con su estabilidad. Los coeficientes de difusi\u00f3n se determinaron a partir de la solucion de las leyes de fick para condiciones de contorno adecuadas, y se han relacionado con los coeficientes de partici\u00f3n de la molecula que difunde entre las fases continua y dispersa de la emulsi\u00f3n-gel, asi como con la estabilidad de las composiciones estudiadas. Las principales conclusiones son las siguientes: se ha estudiado por primera vez la difusi\u00f3n de una molecula incorporada en emulsiones altamente concentradas poniendo a punto nuevos m\u00e9todos de difusi\u00f3n. Los estudios realizados han permitido proponer un mecanismo por el cual se produce la difusi\u00f3n en emulsiones altamente concentradas. La difusi\u00f3n en estos sistemas depende de diversos factores a trav\u00e9s de su influencia en el coeficiente de reparto del acido mandelico entre las fases continua y dispersa de la emulsi\u00f3n-gel y la estabilidad de la emulsi\u00f3n. por este motivo, las emulsiones-gel se perfilan como veh\u00edculos adecuados para la liberaci\u00f3n controlada de
