El tipo de aromas y sabores generados depende de la especificidad de la lipoxigenasa, lo cual va ligado a su vez a la procedencia de la enzima.  la naturaleza anfifilica de los sustratos naturales de lipoxigenasa, los \u00e1cidos grasos poliinsaturados, condiciona su comportamiento en disoluci\u00f3n, complicando el an\u00e1lisis de la reactividad de la enzima. Con el fin de conocer la respuesta de lipoxigenasa ante formas f\u00edsico-qu\u00edmicamente definidas del sustrato y formas que pueden aparecer en condiciones fisiol\u00f3gicas, en esta tesis doctoral hemos hallado sistemas efectivos para la dispersi\u00f3n de los sustratos de lipoxigenasa en medio acuoso, basados en el uso de detergentes y de ciclodextrinas, evaluando posteriormente la utilidad de estos sistemas para componer un medio de reacci\u00f3n \u00f3ptimo para la determinaci\u00f3n de la actividad enzim\u00e1tica. Adem\u00e1s caracterizamos la actividad lipoxigenasa en dichos sistemas y analizamos su respuesta frente a distintos moduladores como el ph y la presencia de cationes en el medio. Para conseguir estos objetivos se emplearon lipoxigenasas de fuentes vegetales, de las cuales las mejor caracterizadas son lipoxigenasa-1 de soja y 5-lipoxigenasa de patata. Por otra parte se ha propuesto un sistema \u00abin vitro\u00bb que sirve como modelo para comprender la oxidaci\u00f3n de \u00e1cidos grasos \u00abin vivo\u00bb en tejidos del almacenamiento de
