La produccion de estos enzimas se reprime cuando se incuban los cultivos en agitaci\u00f3n (alta disponibilidad de oxigeno) y est\u00e1 sometida a represi\u00f3n catab\u00f3lica por la fuerte de carbono.  el estudio de esta capacidad mediante t\u00e9cnicas de gen\u00e9tica cl\u00e1sica demostr\u00f3 que la cepa diploide silvestre 1389 contiene dos genes estructurales que codifican para la producci\u00f3n de pectinasas y la cepa gen\u00e9tica im1-8b s\u00f3lo uno. El an\u00e1lisis de mutantes obtenidos mediante tratamiento de s. Cerevisiae im1-8b con etilmetano sulfonato puso de manifiesto que en esta cepa existen al menos tres grupos de complementaci\u00f3n implicados en la producci\u00f3n del fenotipo halo de hidr\u00f3lisis en placas con \u00e1cido poligalactur\u00f3nico. El gen responsable de la producci\u00f3n de poligalacturonasas en la cepa im1-8b fue clonado utilizando la t\u00e9cnica de pcr y se denomin\u00f3 pgu1.  la expresi\u00f3n de este gen bajo el control de distintos promotores mostr\u00f3 que la actividad depende del pl\u00e1smido utilizado y del fondo gen\u00e9tico de la cepa de s.  cerevisiae transformada.  este gen se encuentra en todas las cepas analizadas independientemente de que sean positivas o negativas en placa. La secuencia de amino\u00e1cidos predicha en base a la secuencia de nucle\u00f3tidos obtenida mostr\u00f3 que las poligalacturonasas (pg) de levaduras presentan una homolog\u00eda de un 54% con las pgs de hongos y solo de un 25% con las pg de bacterias y plantas.  s. Cerevisiae es capaz de expresar una proteina inhibidora de poligalacturonasas (pgip) de frambuesa, pero este inhibidor no es activo contra la pg de la levadura.  algunas cepas seleccionadas de s.
