En los \u00faltimos 25 a\u00f1os, especialmente a partir del estudio de los siete pa\u00edses, se han realizado numerosos estudios que relacionan diversos componentes de la dieta con la morbimortalidad cardiovascular. La dieta mediterr\u00e1nea tradicional parece tener un papel protector frente a la enfermedad cardiovascular. Puesto que los h\u00e1bitos alimentarios juegan un papel fundamental en el desarrollo de arteriosclerosis, el presente estudio trata de evaluar la evoluci\u00f3n de dichos h\u00e1bitos en un per\u00edodo de cinco a\u00f1os (1991-1996) en una muestra de sujetos catalogados como de riesgo cardiovascular seg\u00fan los criterios de la sociedad espa\u00f1ola de arteriosclerosis y compararlos con un grupo control sin factores de riesgo asociados. Se estudiaron 848 sujetos que hab\u00edan participado en 1991 en el estudio drece i (571 con riesgo cardiovascular y 277 sin riesgo).  se realiz\u00f3 a cada individuo un cuestionario de frecuencia de consumo alimentario previamente validado y se compararon los resultados obtenidos en 1991 (estudio drece i) y en 1996 (drece ii).  en cuanto al consumo de los grupos de alimentos, se observa una evoluci\u00f3n m\u00e1s favorable en los h\u00e1bitos diet\u00e9ticos de los individuos con riesgo, que han disminuido su consumo de huevos, l\u00e1cteos y carne y aumentado el de pescado, verduras y frutas. Los individuos sin riesgo han aumentado el consumo de l\u00e1cteos y verduras, manteniendo similar el de frutas y cereales.  en ambos grupos ha descendido la ingesta de legumbres.  los individuos con y sin riesgo han reducido su ingesta cal\u00f3rica durante el per\u00edodo 1991-1996. Este descenso es atribu\u00edble al menor consumo de carbohidratos, que han reducido su contribuci\u00f3n porcentual a la energ\u00eda en 1%.  la dieta espa\u00f1ola contin\u00faa siendo hiperproteica e hipergrasa, suponiendo el consumo de grasa un 43% de la energ\u00eda.
