En esta memoria se han abordado distintos aspectos relacionados con la digestibilidad de estos compuestos fenolicos presentes en las fracciones de fibra alimentaria de distintos alimentos de origen vegetal.  el estudio de las implicaciones nutricionales de estos compuestos se ha centrado en las proteinas, analizando la proteina presente en las fracciones de fibra, asi como un estudio quimico de la interaccion fend-proteina.
