Los surfactantes presentan una estructura qu\u00edmica que mejoran el contacto entre fases no miscibles. La industria alimentaria emplea mayoritariamente los monoglic\u00e9ridos de \u00e1cidos grasos y sus derivados. La s\u00edntesis de estos productos por v\u00eda de esterificaci\u00f3n enzim\u00e1tica se presenta como una alternativa a los m\u00e9todos cl\u00e1sicos empleados a escala industrial. El empleo de enzimas inmovilizadas presenta una serie de ventajas como son la mejora de la selectividad y el rendimiento, as\u00ed como un ahorro desde el punto de vista econ\u00f3mico y de las etapas de purificaci\u00f3n. En el presente trabajo de investigaci\u00f3n se han determinado las variables de operaci\u00f3n que influyen en la esterificaci\u00f3n enzim\u00e1tica de los \u00e1cidos oleico, palm\u00edtico y ricinoleico con glicerina, cuantific\u00e1ndose las influencias en los intervalos estudiados. Mediante el empleo de la t\u00e9cnica del dise\u00f1o factorial de experimentos, se han obtenido los modelos matem\u00e1ticos que permiten optimar dichos procesos, al obtenerse expresiones matem\u00e1ticas que relacionan las variables de operaci\u00f3n con las conversiones y selectividades. Se ha planteado un modelo cin\u00e9tico para la obtenci\u00f3n de monoglic\u00e9ridos del \u00e1cido ricinoleico, obteni\u00e9ndose que un mecanismo ordenado bi-bi es el que reproduce de manera adecuada el campo experimental ensayado. Los modelos cin\u00e9ticos obtenidos reproducen de manera satisfactoria los resultados experimentales obtenidos.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
