Utilizando uno de los m\u00e9todos propuestos se han cuantificado adem\u00e1s del colesterol, tres esteroles minoritarios de la grasa de la leche de cabra.  se ha propuesto un procedimiento para el an\u00e1lisis cuantitativo de la fracci\u00f3n de triglic\u00e9ridos de la grasa de leche, seg\u00fan n\u00famero de \u00e1tomos de carbono, por cromatograf\u00eda de gases mediante la utilizaci\u00f3n de columnas capilares cortas. Con ese m\u00e9todo se ha determinado el perfil cromatogr\u00e1fico de los triglic\u00e9ridos de la grasa de leche de cabra y mediante la aplicaci\u00f3n de una serie de regresiones lineales m\u00faltiples se ha establecido una ecuaci\u00f3n de inter\u00e9s para la detecci\u00f3n de adulteraciones con grasas extra\u00f1as.  por otra parte, mediante cromatograf\u00eda en capa fina impregnada con nitrato de plata se han obtenido cuatro fracciones de los triglic\u00e9ridos de la grasa de leche de cabra por orden de insaturaci\u00f3n.
