Para ello se realizan ensayos de disponibilidad in vitro e in vivo en ratas lactantes. Tambi\u00e9n se estudia la influencia del tratamiento t\u00e9rmico industrial implicado en la elaboraci\u00f3n de f\u00f3rmulas infantiles, deshidrataci\u00f3n, esterilizaci\u00f3n convencional y esterilizaci\u00f3n uht, mediante la disponibilidad in vitro y un ensayo biol\u00f3gico en ratas al destete. De los resultados obtenidos se concluye: 1) el calentamiento dom\u00e9stico, independientemente de su modalidad, de la leche de vaca entera o descremada y de las f\u00f3rmulas infantiles tiene repercusiones m\u00ednimas sobre la biodisponibilidad mineral.  2) el tratamiento t\u00e9rmico industrial de esterilizaci\u00f3n utilizado en la elaboraci\u00f3n de f\u00f3rmulas infantiles en general aumenta la disponibilidad in vitro de los minerales. Sin embargo, en ratas lactantes se observa una disminuci\u00f3n de la ingesta, ganancia de peso y utilizaci\u00f3n nutritiva de la prote\u00edna y los minerales en comparaci\u00f3n con los animales alimentados con la f\u00f3rmula deshidratada de la misma marca comercial. 3) en ratas al destete cuya dieta contiene el preparado esterilizado disminuye la digestibilidad de la prote\u00edna, lo que se asocia con la desnaturalizaci\u00f3n proteica y los productos de la reacci\u00f3n de maillard originados durante su fabricaci\u00f3n, pero se optimiza la utilizaci\u00f3n metab\u00f3lica por lo que la retenci\u00f3n corporal de la prote\u00edna no var\u00eda. Por el contrario, bajo el consumo del preparado equivalente deshidratado disminuye la utilizaci\u00f3n metab\u00f3lica de la prote\u00edna sin llegar a cambiar tampoco el balance. La utilizaci\u00f3n del f\u00f3sforo en estos animales resulta semejante a la de la prote\u00edna. 4) la deshidrataci\u00f3n se asocia con una tendencia a reducirse la
