Se desarrolla una revisi\u00f3n general de la s\u00edntesis enzim\u00e1tica de p\u00e9ptidos, que pone de manifiesto el inter\u00e9s de dichos compuestos, as\u00ed como la importancia de las estrategias de reacci\u00f3n empleadas. Se analiza el mecanismo cin\u00e9tico de desactivaci\u00f3n y desnaturalizaci\u00f3n de la enzima, estableci\u00e9ndose una relaci\u00f3n cuantitativa entre ambos procesos, y proponi\u00e9ndose un modelo cin\u00e9tico en dos etapas con un intermedio activo. Se estudia la s\u00edntesis de kyotorfina en presencia de cinco disolventes org\u00e1nicos, estableci\u00e9ndose una correlaci\u00f3n directa entre la actividad sint\u00e9tica y las caracter\u00edsticas del medio, a saber, log pi, aw y contenido en agua del derivado. Se analizan los efectos de dichos disolventes sobre la actividad sint\u00e9tica de la enzima soluble y su relaci\u00f3n sobre la desnaturalizaci\u00f3n enzim\u00e1tica mediante medidas de fluorescencia, concluy\u00e9ndose que el incremento de la hidrofobicidad del medio incrementa la selectividad de la reacci\u00f3n. Se estudia la estabilidad de la enzima inmovilizada y la influencia de los disolventes miscibles con agua, que estuvo en relaci\u00f3n directa a la hidrofobicidad de los mismos. Se optimizan las condiciones de s\u00edntesis de kyotorfina en un sistema anhidro hexano:etanol y se analiza la influencia del sorbitol como aditivo estabilizante, obteni\u00e9ndose los mejores
